Semma, a South Indian restaurant in New York City's Greenwich Village, founded by Madurai-born chef Vijay Kumar, has remarkably clinched the top spot on The New York Times's 2025 list of best restaurants, a significant leap from its No. 7 ranking in 2024. This unprecedented achievement, just four years after its 2021 opening, validates Kumar's mission to bring authentic, regional South Indian village cuisine, like nathai pirattal and eral thokku, to a global stage without dilution. Kumar, who grew up cooking on a farm near Madurai and refined his skills in India and the U.S. before partnering with Unapologetic Foods, emphasizes using hyper-local, seasonal ingredients and exploring forgotten heritage dishes.
